Built in stone from the Pont du Gard region, the cellar is on two levels. The upper level is used for receptioning the harvest of grapes, some ageing and storage of bottles. The lower level contains the vasts from winemaking and fermentation, the wine press and barrel storage.
The harvest is partially manual, since a primary sorting is done at the vine to select the best lands.
In the cellar, grapes pass onto the vibrating sorting table where they are carefully hand sorted once more. The entire process for the reception of the crop functions by gravity and vibrating systems in order to preserve the quality of the grapes.
